PRODUCTION
ZONE:
North-West Italy. Fontina with Protected Origin Name comes exclusively
from the Valle d'Aosta zone where it has been produced since 1700.
CHARACTERISTICS:
Made from whole cow's milk. Sweet and pleasant flavor, never strong or
bitter and with intense bouquet. An elastic cheese with little holes and
slightly straw-yellow color that becomes stronger with summer cheeses.
The crust has a characteristic reddish brown color
NUTRITION INFORMATION:
This cheese contributes great amounts of live lactic microflora and vitamins.
It is particularly suited for preventing osteoporosis, during maternity
and when breast feeding. It does not create problems with hypertensive
persons.
DINING SUGGESTIONS:
At the end of meals this cheese requires a full-bodied red wine. If it
is used to prepare hors d'oeuvres or first courses it should be combined
with white or rosé wines.
